½ cup mayonnaise ¼ teaspoon garlic powder
1½ cups shredded Cheddar cheese 8 slices bacon, cooked until crisp

Salad/Soup

Potato Soup

A composition of recipes from The (Illinois) Machine Shed Restaurant, Judy Kyler (Loves Park, IL); Kathy Rubey (Rockford, IL) and Jan Marr.      Makes about 3 ½ quarts.

Ingredients:

2 ½ pounds of baby red potatoes, quartered

½ pound raw bacon, very finely chopped

1 jumbo yellow onion, very finely chopped

¼ bunch celery, very finely chopped

1 quart (whole) milk

1 quart water     (substitute 1 can chicken broth for part of the water)

¼ cup chicken base     (try to buy “Better than Bouillon” brand)

1 teaspoon salt

I teaspoon black pepper

1 ½ sticks butter

¾ cup flour

½ pint heavy cream

¼ bunch chopped parsley

¼ bunch green onions

Colby cheese

Green onions

Directions:

Boil potatoes in water for about 10 minutes.  Drain and set aside.

In large heavy pot, sauté finely chopped bacon, onions and celery over medium-low heat until celery is tender and bacon starts to brown.  Separately, sauté enough bacon for garnish.

Drain bacon grease from pot.  Add milk, water (w/chicken broth), chicken base, salt and pepper.  Heat over medium-high heat until very hot.  DO NOT BOIL.

Check potatoes.  When cool enough to handle, cut them into bite sized pieces.  Leaving the peels on is optional.

In heavy, large sauce pan, melt butter and add flour slowly, stirring to make a roux.  Cook on low heat until roux is bubbly (2 to 4 minutes)

Stir roux into soup mixture.  Continue stirring soup until thick and creamy.

Stir in potatoes, parsley and cream.

Serve hot.  Garnishes can include: fried bacon bits (not the artificial junk), chopped green onions, shredded Colby cheese, or all three.
