Grilled Shrimp Extraordinaire

1 pound

Large raw shrimp

1 Tbsp.

Ketchup

1/3 cup

Olive oil or Canola oil

1 Tbsp.

Asian chili paste

¼ cup

Sesame oil

1 tsp.

Salt

2 Tbsp.

Fresh parsley

1 tsp.

Pepper

2 Tbsp.

Hot sauce

4 Tbsp.

Lemon juice

2 Tbsp.

Minced garlic

Blend all ingredients (except shrimp) in blender, preferably one day in advance, to let the flavors meld.  Clean and devein shrimp and put on skewers.  45 minutes before grilling the shrimp, pour marinade over skewers (do not marinade longer than 45 minutes, because the shrimp will toughen if left longer).  After 20 minutes, turn the skewers to marinade the other side.  Make sure marinade is covering all the shrimp before grilling.  Grill for 2 to 3 minutes on each side.

  Main Course

Best Grilled Pork Chops

 Serves 6

“This is a simple recipe adapted from Company’s Coming.  It is simple to throw together the marinade in the morning before going off to work and coming home to an easy dinner to prepare at night.”

½ cup

Water

3 Tbsp.

Lemon pepper seasoning

1/3 cup

Light soy sauce

2

Garlic cloves, minced

¼ cup

Vegetable oil

6

Pork loin chops, fat removed

In deep bowl mix all marinade ingredients.  Marinade at least 2 hours.

Remove from marinade and cook over medium-high heat on greased grill for no more than 15 minutes or until done.  Cooking time for second side is shorter by 1 to 2 minutes.  For chops that are ¾” or thinner, 5 to 6 minutes maximum per side; thicker than ¾”, 6 to 7 minutes maximum per side.  DO NOT OVER_GRILL, chops will become tough.  After 2 minutes grilling on a side, rotate chops 45 degrees for even cooking.  Turn over when juices pool on upper surface and meat appears to be cooked half-way through.
